What's For Dinner

Tonight I made a Turkey Breast Tenderloin in the slow cooker. It turned out pretty tasty. I've never made a turkey breast tenderloin before, so I was a little nervous. With the turkey we had mashed red potatoes and green beans. I'd say that's a pretty healthy meal.... at least in my book. There was enough leftovers for 2 lunches tomorrow too.

My husband just placed his order for his "free" fresh turkey that his company orders from the farm for all their employees. He ordered like an XXL turkey, last years was about 25 pounds. So I need some fun new turkey recipes for all the leftovers we're sure to have. I made a library run today for some cookbooks so hopefully I'll find something. If there are any readers..... I like to imagine there is, you know... to bolster my ego..... send in your favorite recipes. No turkey sandwiches please..... we aren't bread eaters here.

  1. Wow, Erin. I think you might just pull this off.
And yeah, it's not like you to fight for a mere three dollars. But, hey, it's three bucks. You're so silly. I enjoyed reading your blog. I think I might try this challenge too now that I'm on a really tight budget myself. I tend to spend more and buy more than what I need to.

  2. My first comment!

If you do try this let me know. This week has been a little hard, but I'm hoping it gets easier as I go.
